Garlic Pepper Shrimp with Three Cheese Tortellini and Andouille Sausage
This recipe came about as a result of canvasing my pantry and fridge for dinner possibilities. I just so happened to have some jumbo shrimp and andouille sausage. The decision was then to decided whether to serve it over rice or pasta. Fresh three cheese tortellini was a different spin I decided to use. This recipe will also be excellent using a creamy base similar to our Shrimp and Grits recipe. -
Chilau Crab Boil with Garlic and Shallot Butter Sauce
A perfect day for a seafood boil. Instead of the huge pot in the backyard this time around I went with the simple approach in the kitchen with King Crab, Snow Crab, Shrimp, Potatoes, Eggs and Sausage. The Boil Bomb makes it super easy to whip up a boil quickly in a small pot in the kitchen or a huge cooker outside. This recipe is to suite my 8 quart dutch oven but feel free to put your spin on it and throw whatever seafood, meats and veggies you want in that delicious water!

Chicken and Rice in cast iron skillet
Chilau Sauce and seasonings are excellent for non-seafood based recipes. I stumbled on this extra large cast iron skillet recently and decided to make chicken and rice in it. For this recipe I went with chicken thighs as they maintain their juiciness throughout the cooking process. This recipe would work great as well with seafood and other meat selections. Excellent flavor! -
Corona Garlic Crabs
This meal was created as a coping mechanism. Covid-19 aka Corona Virus lead us to social distancing and comfort food was needed to brighten the day. To put it simply "when life gives you Corona, makes Corona Crabs", pun intended. :)
This was a different take on garlic crabs where I decided to use beer, garlic and our Chilau Garlic Pepper and Original seasonings to drive the flavor vs. using our go-to Boil Bomb which was out of stock at the time. Flavor turned out amazing!

Yellow Curry Chicken with potatoes and Chilau
This curry recipe turned out excellent! I usually prefer chicken thighs but the breast worked out well as there were no thighs available. Curry is one of those dishes that can be intimidating to some. Using this approach it was easy and quick, and didn't require a ton of ingredients. Since are currently under quarantine for Covid-19 and practicing social distancing having a delicious meal will put a smile on your face! :) -
Seafood Rice (kinda like Paella) with Lobster, Shrimp, Mussels and Smoked Sausauge
Very similar to Paella this seafood rice with lobster, shrimp, mussels, and sausage is super easy and very flavorful. Get creative with the seafood and veggies you add for virtually unlimited flavor combinations!
